The Carrot Halwa is a traditional Indian dessert made from grated carrots, milk, ghee, and sugar. It is also known as Gajar ka Halwa, a popular sweet dish in North India. This dessert is often served during festivals, special occasions, or as a sweet ending to a meal.

The first step is to grate the carrots and set them aside to make Carrot Halwa. Then, in a deep pan, heat ghee and add the grated carrots, stirring them well. Cook the carrots until they turn soft and change color. Then, add milk to the pan and continue stirring. As the milk boils, it will start to reduce and thicken. Keep stirring the mixture to avoid burning the milk.

After reducing the milk to half its original quantity, add sugar and continue cooking on a low flame. The sugar will melt and blend with the carrot mixture. Add cardamom powder and mix well. Cook until the halwa becomes thick and the carrots are fully cooked.

Garnish the Carrot Halwa with chopped nuts like almonds, cashews, and pistachios. Serve it hot.
